A couple of weeks ago I went to Pittsburgh for a quick little day trip.
It was lovely!
There is a really awesome restaurant called Eden, and we decided to stop there for dinner and check it out. The menu is… AMAZING.
All of the food is local, and the menu changes seasonally depending upon what is freshest. The best part? A good portion of the menu is raw vegan, the rest is cooked, and you have the possibility of adding different types of protein to it.
Tons of options = everyone’s happy!
To start we had a stuffed avocado with a slaw marinated in cashew dressing and sprouts.
For my entrée, I opted for a raw flatbread made of pumpkin and flax seeds. Topped with a pine nut and cashew parmesan pesto and greens.
Chris opted for a more hearty option with a savory chili with goat cheese. For extra protein he added some free range chicken.
For dessert (because we had too) we had a raw beet and orange cheese.
HOLY FRICKIN MOLY.
This hands down was one one the best raw cheese cakes that I have ever had. I wish I knew how they did it so I could recreate it.
Would I go back there again?
A thousand times yes!
