For round four of vegan thursday I whipped up an oldie but a goodie…

My favorite carrot mess topped with a fun new ingredient that I picked up this past weekend. Figs!

I’ve been tweaking the recipe a bit for my Spiced Carrot Puree which im thinking of giving a new name! Needs something a little more festive. Ideas?

Spiced Carrot Puree

2-3 medium carrots, chopped

1 banana, chopped

1/2 cup milk of your choice (soy, almond, rice, hemp)

2 tbsp peanut butter

1/2 packet of stevia

1 tsp agave

Pinch of nutmeg, cardamom and cinnamon.

Assembly

In your food processor process carrots until finely shredded. Add your banana, milk, peanut butter, stevia, agave and nutmeg, cardamom and cinnamon and process again. Enjoy!

If your feeling adventurous you can add different spices like apple pie spice, pumpkin pie spice or chai spice. Aaaannd then you can add the toppings which is my favorite part. I love adding granola, nuts, fresh fruit, dried cranberries, bloobs, papaya or even rice cakes.

Vegan Cupcakes Take Over the World… or VCTOTW.

Thank you Isa. I suppose it wasnt too challenging to guess which one it was, but im so excited to get baking. Next on my agenda are S’mores cupcakes. One of the things I really like about this book is how it has the cooking glossary in front of the book that goes through different types of flours, sugars and all kinds of substitutions. It also includes tip and tricks for trouble shooting and ideas about why your cupcakes turned out kind of funky. It’s a really fun book to look at to – if you get a chance flip through it!

A new favorite snack of mine, a sweet carrot shmeered with a huge glob of tahini. I finished off the last of my jar today! Boo 😦 But on the bright side it looks like a trip to my one of my favorite ethnic food stores is in order!

Quick post tonight! Ive got a valentine’s day card for spanish IV to finish and I have to track down some more Zumba music on iTunes.

    Hmm, a new name? How about “Hottie Carrot Shmoo”? (the Hottie is the Spiced part, and the shmoo soundsl like a pureed food!) 😀

    S’more cupcake sounds amazing…Ahh! I wish I had some!

    I don’t own the cookbook, but I think it’d be really cool to own it! (especially if you like baking and/or cupcakes!

  4. I DO own that book and I’m obsessed. My favorite cupcakes are the Pumpkin Chocolate Chip with Cinnamon Icing.

  6. Those purees you come up with are so creative! I’ve had pumpkin with banana before, but never carrot or SP like I’ve seen you do. Delicious sounding ideas that I must try.

    I don’t own that cupcake book as I’m not a vegan, but it would be interesting to see what a vegan cupcake tastes like; I’m not sure I ever had one!

  10. I want that book so badly! I’ve seen some of the cupcakes scattered around the blogworld and they look so creative and fun. =D

    Vegan Thursday will see me creating something from Veganomicon.. it’s super simple but I like to look at it like I’m at least trying something new.

  11. Thanks for your input on raw food and digestion, Michal! I really do appreciate it. I guess the fact of the matter is that I am sort of scared to just do the trial and error type of thing – keep trying and trying until I settle on something. Maybe I don’t want to take the time to do that? Maybe I see the benefits that raw foods have blessed so many people with that I think it will do the same for me?

    I agree, I don’t want my digestive system to shut down either. However, it is working a lot better now than it has been in the past. (Except for when I eat a lot of cooked things or when I overindulge).

    I think I will just see how things go for me…do some more research…and do what is right for me. It will be a challenge, considering I can be very obsessive compulsive at times (not a good thing!), but I think I can do this.
